Cricket Powder Protein Crackers

Be careful because these crackers are addictive. Try topping with combinations such as avocado, tomato and hummus or beetroot, feta and olive oil. Powered by cricket powder these crackers are high in protein. These crackers have a great crunch to them and are rewarding and fun to make over store-bought options.

Ingredients

  • 3/4 cup almond meal
  • 2 Tbsp cricket powder
  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup chia seeds
  • 1/4 cup flaxseed/linseed
  • 1/4 cup sesame seeds
  • 1/4 cup sun-dried tomatoes
  • 3/4 cups water
  • 1 Tbsp sesame oil
  • 1 Tbsp extra virgin olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp onion powder

Preparation

Preheat oven to 170°C and place baking paper over two trays

Using a food processor mix together all of the dry ingredients including the sun-dried tomatoes

Place blitzed mixture into a bowl and mix in water, sesame oil and olive oil

Place half the mixture onto each tray and roll out thinly between 2 sheets of baking paper

Cut the mixture into squares roughly 4cm x 4cm

Bake in the oven for 30 minutes or until crispy, flipping crackers over halfway through and brushing with olive oil
